Long Piped Milk Cookies

The classic long-piped semperit with sweetened condensed milk and Brown & Polson cornflour — the recipe Malaysians grew up with at Hari Raya. Buttery, milky, and instantly nostalgic.


Ingredients

Dough

  • 250 g butter (softened at room temperature, but not melted)
  • 1 cup / 315 g sweetened condensed milk
  • 500 g cornflour (preferably Brown & Polson)
  • 1 tsp vanilla essence
  • Chocolate chips, for garnish
Tip: If your kitchen is warm and the dough feels too soft to pipe, chill it briefly — just a few minutes is enough to firm up.

How to Make

  1. Preheat. Preheat the oven to 150°C and prepare your baking trays.
  2. Soften and cream. Soften the butter at room temperature. Beat the butter with the condensed milk on low speed (or by hand) until smooth and combined.
  3. Flavour. Mix in the vanilla essence.
  4. Add cornflour. Add the cornflour gradually, mixing gently until you have a soft dough. Stop when the dough comes together — don’t over-knead.
  5. Rest. Rest the dough for 10 minutes (Che Nom prefers a quick chill in the fridge so the dough is easier to handle). If too firm, leave at room temp for 2–3 minutes.
  6. Pipe. Load into a piping bag fitted with a long flower nozzle. Pipe long strips onto trays with consistent pressure for even shapes.
  7. Decorate. Decorate each cookie with a chocolate chip.
  8. Bake. Bake at 150°C for 12–15 minutes — start checking from minute 10. They’re done when set and the bottoms are just starting to colour.
  9. Cool. Cool on the tray for 5–10 minutes (the cookies are fragile straight out of the oven), then transfer to a rack until completely cool.
  10. Store. Store in an airtight container to keep them crisp.

Baking Tips

  • Don't over-whip the butter — you want it just smooth, not airy, for a tender crumb.
  • Brown & Polson cornflour gives the most authentic, dissolves-on-tongue texture.
  • Pipe with steady, even pressure to keep the strips uniform.
  • Watch the bake closely — these go from pale to overdone quickly.
